Lemon curd tartlets...

To make these delicious tartlets, you need:
3 sheets of shortcrust pastry
100g butter
225g caster sugar
2 egg yolks, plus 4 whole eggs - beaten together
Finely grated rind and juice of 2 lemons

Preheat oven to 180'c. Cut out the shortcrust pastry using a ramekin or a small bowl around 8-10 cm wide. Stretch the pastry enough to bend easily, then lay the pastry inside wide cupcake dishes. Place pastry in oven for 10-15 minutes or until golden. During this time, fill a saucepan 1/4 of the way up with water and bring to the boil. Cover the saucepan with a tight fitting bowl. Place all ingredients into the bowl over the boiling water until thick and glossy.
Once the pastry is ready, use a teaspoon to spoon the mixture into the pastry.
